I originally made these cookies for Teacher Appreciation Day. The morning I was supposed to bring them into my son's daycare, I realized we only had 1/4 of a bag of chocolate chips left. It was 4:45am and I couldn't get to a store, so searched my cupboards to see what I could whip up. Thankfully, I found the marshmallows, graham crackers, and chocolate bars I had preemptively purchased for our Memorial Day Party and decided to experiment with a s'mores based cookie. The results? A delicious and fun summer cookie that evokes memories of sitting around a summer campfire. Enjoy!
Ingredients:
- 1 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour, leveled
- 2 teaspoons cornstarch
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 2 cups mini marshmallows
- 2 cups graham crackers, broken into small pieces
- 1 cup chocolate chips (I used dark chocolate but you can use a combination of whatever you prefer or have on hand)
- 2-3 Hershey's chocolate bars, broken into pieces
Directions:
1. Preheat oven to 375 degrees and line baking sheets will Silpat mats or parchment paper.
2. In your Kitchenaid mixer or large bowl with a handheld mixer, combine the softened butter and sugars and beat for 2-3 minutes until creamy.
3. Add the vanilla and eggs and continue to mix until well incorporated.
4. Add the dry ingredients (flour, cornstarch, baking soda, and salt) and mix until just combined. Do not over mix.
5. Reserve 1/2 cup each of the mini marshmallows, broken graham crackers, and broken chocolate bars. Set aside. Add the remaining 1 1/2 cups each of the marshmallows, graham crackers, and Hershey bars pieces into the dough. Add the chocolate chips and gently stir or mix on low until just blended.
6. Using an ice cream scoop or spoon, scoop balls of dough that are 2-3 tablespoons in size onto the baking sheets. Make sure there is room for the cookies to spread while they bake.
7. Bake for 10 minutes, then remove from oven and carefully press a few pieces of the reserved mini marshmallows, graham crackers, and chocolate pieces into each cookie.
8. Place back in the oven for 1-2 minutes. They will continue to bake on the pan so don't be tempted to leave in the oven for too long.
9. Let cool on the pan for at least 5 minutes and transfer to a wire cooling rack,
These cookies will last 4-5 days (but most likely won't!). Enjoy!
